This peach cake roll is fairly simple and quick to make. It is soft, light, and moist, and each bite is bursting with flavor from the sweet juicy peaches.
Ingredients
- 1 can condensed milk
- 1 cup of flour
- 1 tsp Baking powder
- 2 eggs
- 8 oz cool whip
- 8 oz Cream cheese
- 1/2 cup sugar
- 14 oz canned peaches
Instructions
- Thaw cream cheese and cool whip to room temperature.
- Preheat oven to 350°F with the baking rack in the middle.
- Add 1 can condensed milk to a bowl. Then add 2 eggs to the condensed milk and stir until smooth. Add flour and baking powder and stir until smooth again.
- Use a 12×17 inch baking pan with a baking sheet. Add batter and spread evenly. Bake for 20-25 minutes, or until the middle is baked through.
- Once baked roll up the cake using parchment paper or towel. Let cool.
- Make the frosting by whipping the cream cheese with the sugar. Add cool whip and mix well.
- Assemble the cake by first adding peach syrup throughout the entire cake.
- Next Add about 3/4 of the frosting on the cake spreading evenly.
- Add diced peach slices.
- Roll cake tightly.
- Spread the remaining frosting on top of the cake and sides. Decorate with remaining frosting and or sliced peaches.
