Smoked Chicken Pepper Salad

This salad is quick, easy and simple but so so flavorful! It is filled with a ton of simple veggies and protein which makes it perfect for lunch! This dish is also a great side salad for your next get together or party!

Ingredients

  • 1 Lb smoked Chicken about 3 drumsticks (you can substitute for non smoked or other lean meat!)
  • 1/2 English Cucumber  
  • 1 large Tomato
  • 3 Bell Peppers – yellow, red, orange.
  • 1 can of sweet corn
  • Mayo- 4-5 tbsp 
  • Salt – 3/4-1 tsp 
  • Pepper – 1/2 tsp 
  • Optional- Dill/parsley, minced garlic 

Instructions

  1. Wash and dice you veggies-peppers, tomato, and cucumber. Add to a large bowl
  2. Dice chicken the same size as the veggies and add to the bowl. (You can remove or keep the skin on)
  3. Drain the water from the corn and add to the bowl.
  4. Add seasoning and Mayo (start out with less and add more per taste) Mix well.
  5. Optional- add dill, parsley or mixed garlic. You can make this salad ahead of time, just add the mayo right before serving!
