Loaded Potato Soup

Ingredients

  • 5-6 large potatoes, peeled and cubed
  • 12 oz bacon, bite-sized pieces
  • 4 Tbsp butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 3 cups chicken Broth
  • 3 cups Milk
  • 2 cup cheddar cheese
  • 1 cup sour cream
  • 1/4 cup Flour
  • 1 plus 1/2 tsp salt, or more per taste
  • 1/2 tsp pepper or more per taste
  • To serve options: green onions, bacon, sour cream, shredded cheese

Instructions

  1. Place sliced potatoes into a pot and completely cover with 1 inch of water.
  2. Season with ½ tsp salt and cook 8-10 minutes or until potatoes are ready. Do not overcook!
  3. Saute bacon in a pot ( same pot you are using for your soup) until crispy then transfer to a plate, reserving 2 Tbsp bacon grease in the pot. 
  4. Add chopped onions and garlic. Saute till ready.
  5. Add butter. Once melted quickly add the flour and mix well.
  6. Slowly add milk and chicken broth. Whisk constantly.
  7. Once soup is lightly boiling, add drained potatoes and season soup with the rest of the seasoning or more per taste.
  8. Stir in sour cream, shredded cheddar, and half of your cooked bacon.
  9. Bring to a boil and remove from heat.
  10. Serve with your favorite toppings!!
