Lemon parmesan salmon spaghetti

This 30 minute meal is light, creamy and so flavorful! Elegant yet really simple dish that will wow your family with hardly any effort on your part. It is the perfect choice for family dinner night or simply when you want a restaurant-worthy dish to treat yourself. 

Ingredients

  • 16 oz salmon fillets
  • 12 oz spaghetti 
  • 16 oz heavy cream
  • 5-8 oz shredded parmesan
  • 4-8 garlic cloves minced
  • Juice of a small lemon
  • Salt & pepper 
  • 4 tbsp butter 
  • 2 tbsp olive oil 
  • Fresh or dry parsley optional 

Instructions

  1. Cook spaghetti per package instructions
  2. Wash and pat dry salmon. Cut into bite size pieces and season with salt and pepper on both sides.
  3. Heat a large skillet on medium heat with oil.
  4. Add salmon pieces. Sear on both sides 1-2 min per side.
  5. On low – medium heat, add butter to a sauce pan or the same skillet from salmon. Add minced garlic.
  6. Add heavy cream, lemon juice and Parmesan cheese. Mix well until melted and season per taste.
  7. Reserve about 1/4 cup of the sauce.
  8. Add rinsed spaghetti into the sauce pan and mix well. Move to a serving plate.
  9. Top with cooked salmon pieces and reserved sauce over the salmon. Enjoy right away!
