Lemon Garlic Shrimp Salad

This delicious salad will become your new favorite salad! It is a perfect side salad for the upcoming holidays, parties, easy lunch or even a meal that your entire family will love! Not a shrimp lover? No worries just substitute with your favorite protein like chicken and it will taste just as delicious!

Ingredients

  • 1 lb Pan fried or grilled Shrimp, seasoned
  • 6 sliced bacon Cooked and chopped
  • 5 cups chopped lettuce
  • 2 hard boiled eggs sliced
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sweet corn
  • 3 Tbsp Mayo (dressing)
  • 1/2 large lemon juice (dressing)
  • 3 large garlic cloves minced (dressing)
  • Salt and pepper for taste
  • optional add in’s- sliced onions, cucumber’s, shredded cheese

Instructions

  1. Prep all your ingredients. (Chop and slice the veggies. Cook the bacon and shrimp)
  2. To a large serving plate spread the lettuce all around.
  3. Now layer the rest of the ingredients side by side. Tomatoes, corn, shrimp, bacon, avocado and eggs.
  4. Season lightly with salt and pepper.
  5. Make the dressing by combining mayo, lemon juice and minced garlic. Mix well and drizzle over the salad. Serve right away!
  6. Tip: to make this salad ahead of time, prep all ingredients (except avocados) and layer on the serving plate. Make the dressing but don’t drizzle until ready to serve!
