Maple Glazed Apple Cake

This fresh apple cake is very moist with tender apples and a sweet maple glaze, and it’s all made from scratch! This is the ultimate fall cake, perfect for breakfast, brunch or dessert.

Ingredients

  • 4 Large Apples
  • 3 eggs
  • 1 cup Flour
  • 1 cup Sugar
  • 1 cup powdered sugar (glaze)
  • 1/2 cup Maple syrup (glaze)
  • 1.5 Tbsp milk (glaze)
  • 2 Tbsp butter (glaze)

Instructions

  1. Preheat oven to 350F.
  2. Wash, peal and dice apples into one inch pieces.
  3. Using a hand mixer, beat eggs with sugar, until three times the volume.
  4. Using a spatula, fold in flour by thirds. Do not overmix and lose the fluffiness.
  5. Lay out the diced apples on the bottom of a 9 inch pan. Cover apples with cake batter. Spread the batter with spatula if needed.
  6. Bake it at 350F for 40 minutes, check using a toothpick.
  7. While the cake is cooling, make the maple glaze. Add maple syrup to a saucepan and boil for 5 minutes on low heat. Remove from heat and add butter. Once melted add the milk and powdered sugar. Whisk until smooth.
  8. Once cake has cooled to room temperature, pour the glaze over the apple cake. Glaze will set within minutes. Serve right away!
