Delicious Frittata Recipe

Another quick and easy delicious breakfast recipe that is perfect for those busy mornings! Prep ahead and just pop into the oven right before serving!

  • 6 large eggs
  • 1 cup shredded cheese any
  • 1/2 cup cherry or diced tomatoes
  • 1/2 cup diced peppers
  • 1 cup arugula
  • 1/3 cup heavy cream
  • 1 tbsp butter or oil
  • 1/2 tsp Salt
  • 1/4 tsp pepper
  • Optional- Bacon, sausage, scallions, fresh mozzarella

Instructions

  1. Preheat the oven to 400F.
  2. Whisk eggs, heavy cream and salt until smooth.
  3. Cut or dice tomatoes. Chop bell peppers into small pieces.
  4. Coat the sides of a baking dish with butter or oil. Spread vegetables on the bottom of the pan. 
  5. Pour over the egg mixture. Add any other additional toppings. Sprinkle the cheese on top.
  6. Bake for 15 to 17 minutes, or until the edges are set and the top is lightly browned.
