Baked Pierogi Casserole

You can’t go wrong with mashed potatoes, bacon and cheese! This quick and easy casserole is so delicious, cheezy and comforting. Perfect meal for the entire family!

Ingredients

  • 16 oz pkg frozen potato filled pierogi
  • 3-4 slices bacon, cooked crisp & crumbled
  • 2-3 oz cream cheese
  • 1 cup water
  • Better than bullion seasoning 1/2Tbsp or per taste
  • 1/2 -1 cup cup shredded cheddar or mexican cheese
  • Scallions for garnish (optional)
  • Sour cream to top ( optional)

Instructions

  • Place the frozen pierogi in a single layer in a casserole dish.
  • Add the cream cheese, water and better than bullion to a medium sized pan, heating over medium heat. Whisk until the sauce is smooth and boiling. Pour it evenly out over the pierogi.
  • Sprinkle the shredded cheese, scallions & bacon evenly out over the top
  • Bake the dish at 400 degrees for 20-25 minutes, until the cheese is bubbly and the pierogi are cooked through.
  • Optional: Top with sour cream!
