You can’t go wrong with mashed potatoes, bacon and cheese! This quick and easy casserole is so delicious, cheezy and comforting. Perfect meal for the entire family!
Ingredients
- 16 oz pkg frozen potato filled pierogi
- 3-4 slices bacon, cooked crisp & crumbled
- 2-3 oz cream cheese
- 1 cup water
- Better than bullion seasoning 1/2Tbsp or per taste
- 1/2 -1 cup cup shredded cheddar or mexican cheese
- Scallions for garnish (optional)
- Sour cream to top ( optional)
Instructions
- Place the frozen pierogi in a single layer in a casserole dish.
- Add the cream cheese, water and better than bullion to a medium sized pan, heating over medium heat. Whisk until the sauce is smooth and boiling. Pour it evenly out over the pierogi.
- Sprinkle the shredded cheese, scallions & bacon evenly out over the top
- Bake the dish at 400 degrees for 20-25 minutes, until the cheese is bubbly and the pierogi are cooked through.
- Optional: Top with sour cream!
